Marzipan Ricotta Cake

My future son-in-law likes marzipan, as I’ve already here. I baked him a cake, of course with his beloved marzipan. The result was this marzipan ricotta cake, which turned out delicious. Cut into small squares and sprinkled with powdered sugar, it is a delicacy. In summer I would top it with berries!

Ingredients

For a 22/22 cm square Cake:

  • 250 g Ricotta

  • 150 g Cream Cheese

  • 3 Eggs

  • Zest of 1 Lemon

  • 180 g Marzipan, grated

  • 240 g ground Almond

  • 80 g Sugar

  • Powdered Sugar for sprinkling

Instructions

Step 1

Line the cake tin with baking paper.

Step 2

Mix the ricotta, cream cheese, lemon zest and almonds with the eggs and sugar. Then mix in the grated marzipan.

Step 3

Pour this mixture into the cake tin and bake in the oven at 150°C for 55-60 minutes. Leave to cool and sprinkle with powdered sugar.

Notes

Decorate with fresh berries or some chocolate.
