Simple Wrap with Vegetables

When I’m alone, I cook something simple and quick. This includes a simple wrap with vegetables. Okra, eggplants, some carrots, whatever you have in the fridge fits in here. Add some cheese, served with lettuce leaves and sour cream mmmmmmmmmm….. almost a gourmet meal!

Ingredients

  • 1 whole wheat Wrap/Tortilla

  • 5 Okra

  • 1 small Asian Eggplant

  • 1 Carrot

  • 2 Garlic cloves

  • 2 tbsp Coconut Oil

  • Salt and Pepper

  • Chili Powder

  • Paprika

  • 20 g grated Appenzeller Cheese

  • 3 tbsp Sour Cream

  • Lettuce Leaves

Step 1

Cut the okra and eggplant into small pieces, roughly grate the carrot, and chop the garlic. Heat 1 ½ tbsp coconut oil in a pan and add all the vegetables. Fry well, this will take about 10 minutes.

Step 2

Meanwhile, fry the whole wheat tortilla in ½ tbsp coconut oil on both sides until it bubbles. Top with the grated cheese, then place the cooked vegetables on one half and fold over.

Step 3

Place on a plate and serve with salad leaves and sour cream.
