Lamb Fillet in Puff Pastry on Vegetable Noodle

We had small lamb fillets in puff pastry, nicely wrapped, a dish without much frill, but very good. The good thing about it is that if you have a big family, you can prepare it wonderfully ahead and just put it in the oven.
To make the meal perfect, I simply served it with potato gratin and roasted vegetable noodles.

Ingredients
For the Lamb
2-3 Lamb Fillets if they are very small, otherwise just one
1 Piece of Puff Pastry
2 Slices of row Ham or Bacon
1 tsp coarse Mustard
1 Egg yolk for basting
1 Carrot
1 Zucchini
Salt and Pepper
10 g Butter
1 Pinch of Sugar
Vegetable Noodles
Instructions

Step 1
Cut the puff pastry into large enough rectangles, place 1 slice of raw ham on top and then the lamb fillet (or 2-3 small ones).

Brush the fillets with mustard and place another slice of raw ham on top.

Wrap the puff pastry around the fillet and decorate with leftover pastry. Then brush with the egg yolk.

Bake in the oven at 180 C degrees for about 40-45 minutes.

Cut the vegetables into long julienne strips and boil in salted water for about 4 minutes, drain well. Melt the butter in a frying pan and fry the vegetable noodles in it, season well and add a pinch of sugar.
