Cheese Pie with salty Short crust Pastry

Normally, I make cheese pie with puff pastry, which goes great together. But what to do when you can’t get any? In Asia it is a gamble! So, I made a hearty short crust pastry, it also fits, but is not to compare with puff pastry.

Ingredients
For the Dough: (baking pan 32 cm diameter)
200 g Flour
100 g grated Parmesan
200 g cold Butter diced
1 Egg
½ tsp Salt
250 g Gruyère Cheese, grated
120 g Asiago Cheese, grated
150 g Blue Cheese, broken up
200 g diced Bacon
20 g Rocket, chopped
1 red Onion, chopped
½ Bunch Parsley, chopped
2 Eggs
½ tsp Pepper
1 tsp Paprika
Nutmeg

For the Filling:

Step 1
Put the ingredients for the dough in a food processor and crumble briefly with the dough hook until it looks like crumbles, then quickly knead together with cold hands. Refrigerate, wrapped in cling-foil, for at least 30 minutes.

Fry the bacon cubes in a pan until crispy, then let cool. Then mix all the filling ingredients together.

Roll out the dough between 2 sheets of baking paper, it sticks! Line the baking pan with the dough and prick the bottom several times with a fork.

Pour the filling on top and bake in the oven at 180 C degrees for 45-50 minutes. Serve warm!
