Salmon with Potatoes and Sauce Hollandaise

Simple, quick and delicious, that’s exactly what this meal is. Fine salmon with a very crispy skin, served with boiled potatoes and a delicious hollandaise sauce with basil. Accompanied by a fine glass of wine, this is how to enjoy life!

Ingredients
2 Slices Salmon with Skin
4 Potatoes
1 Broth Cube
2 tsp Pesto
½ Handful Basil Leaves
1 Portion Hollandaise Sauce
A few dried Flowers for deco
some small Chips
Lemon slice
1 tbsp Olive Oil
Instructions

Step 1
Peel the potatoes, cut them into halves and put them in a pot with water. Add the stock cube and boil for 15 minutes, then drain.

Meanwhile, spread the pesto on the non-skin side of the salmon. Heat the olive oil in a shallow pan and place the salmon skin side down. Cover and fry for about 7 minutes. Then turn the fish over and let it fry, covered, for 4 minutes. Turn back onto the skin and fry again until cooked through.

Meanwhile, make the hollandaise sauce according to this recipe, adding a few basil leaves at the end.

Arrange everything on plates and decorate with dried flowers, lemon and crisps/chips.
