Croquettes very easy

Croquettes are quite easy to make from leftover mashed potatoes, it does not need much.
But the mass must be very firm, so that they do not fall apart during frying. I did not cook them in the fryer, but in the pan in a little oil. In the Fryer, floating in the oil, they also fall apart. I think, they would be good in an airfryer!

Ingredients
500 g mashed Potatoes
1 Egg
100 g grated Cheese
2 tbsp Parsley, chopped
approx. 120 g Breadcrumbs
Instructions

Step 1
Mix all the ingredients, except the breadcrumbs, very well. Refrigerate the mixture for 1 hour.

Then form small balls out of it, turn them in a bowl full of breadcrumbs and put them on a plate. Refrigerate again for 1 hour.

Fry in a shallow pan in a little oil on all sides.
