Beetroot and Sweet Potato Patties

The 19. Food-Challenge of Foodblogsschweiz has the Theme “Autumn treasures”.  Autumn brings not only colors into the woods and gardens, but also to the kitchen. Beautiful colors have those autumn vegetables! Look at beetroot, pumpkin and mushrooms, traditional colors of these month.

I used beetroot and sweet potatoes, as the had matching colors and both fit well together. My sweet potato was red too, but you can also use yellow or orange ones. If you work with such vegetables you know you need to wear gloves, because especially the beetroot is coloring everything. You don’t want to be reminded a few days later of what you ate days ago (Hmm .. or maybe it was that good?) Anyway, I am happy to take part in this food challenge!

Zutaten

  • 2 Beetroot

  • 2 Sweet Potatoes

  • 20 g grated Cheese

  • 2 Eggs

  • Salt and Pepper

  • Paprika

  • 1 tbsp Cornstarch

  • Only as much Flour to make the mixture stick together

  • Oil for frying

Instructions

Step 1

Peel the beetroot and sweet potatoes, then grate them on a coarse grater. You may use gloves to protect your hands.

Now mix the vegetables with all the other ingredients, except the oil. Mix well and knead together.

Step 3

Heat the oil in a flat pan and add heaps of the mixture to it. Push them slightly down to flatten them, fry them on both sides well.

Notes

You can serve the patties with some seasoned sour cream.
