Chicorée Suppe – Chicory Soup

Chicorée kann  man zu vielem mehr benuetzen, als nur Salat oder ueberbacken. Ich mache daraus auch eine Chicorée Suppe und ueberrasche damit gerne meine Gaeste. Sie raetseln dann, woraus wohl diese Suppe gemacht wurde. Gestern wurde Blumenkohl, Weisskohl und Kartoffel geraten, alles falsch! 😀

Ueberrascht, dass es Chicorée war und die Suppe trotzdem nicht bitter ist, assen sie mit Genuss weiter.

Chicory can be used for many more dishes then just salad and baked vegetables. I like to surprise my guests with a soup. My guests then start guessing what the ingredient of this soup is. Yesterday they guessed cauliflower, green cabbage and potatoes, of course, all of them were wrong! 😀

You can imagine their surprise, when I told them, it was chicory. They ate it with delight, as there was no bitterness as expected with the cooking of chicory. 

Chicorée Suppe

Fuer 6 Portionen:
3-5 Chicorée
1 Lauchstange
1 grosse Kartoffel
1 L Gemuesebruehe
20 g Butter
100 ml Sahne
Salz und Pfeffer
Chiliflocken
Paprika

Den Chicorée und den Lauch in ca 5 mm duenne Streifen schneiden. Die Kartoffel schaehlen und wuerfeln.
Die Butter in einem Topf schmelzen und das Gemuese und die Kartoffel zugeben. Wuerzen und alles gut anbraten lassen. Dann mit der Bruehe abloeschen. Die Suppe ca 20 Minuten koecheln lassen, dann im Blender puerieren. Zurueck in den Topf giessen und die Sahne zugeben, nochmals nachwuerzen und heiss servieren.

For 6 Portions:
3-5 Chicory
1 Leek
1 big Potato
1 L Vegetable Broth
20 g Butter
100 ml Whipping Cream
Salt and Pepper
Chili flakes
Paprika

Slice the chicory and leek into approx 5 mm slices. Peel the potato and dice it. 
Melt the butter in a big pot and add the vegetables and the potato. 
Season well and fry until slightly soft. Then add the vegetable broth and let simmer for 20 minutes. 
Puree in a blender and pour back into the pot. 
Add the whipping cream and season to taste if needed.
Serve hot!
