
Farmers Flour Bread Rolls

It’s time again for some nice breakfast rolls!
I love to work with bread dough. The kneading has something calming for me; and it’s just wonderful to see how the yeast works with the flour, making it rise and get bubbly.
This time I used a farmer’s flour from Switzerland which is made from 85% strong wheat flour and 15% rye flour. You get real nice rustic bread rolls with this mixture. They fit wonderful to cheese and cold meats, but also for breakfast with honey or jam. It’s a very simple bread dough made from just 4 ingredients.

Ingredients
For 4 approx. 200 g Bread Rolls: (or 8 pieces of approx.100 g)
500 g Farmer’s Flour
11 g Dried Yeast
300 g warm Water
10 g Salt
Instructions

Step 1
Mix the flour with the dried yeast, then add the warm water. Turn your machine to level 1 and let it knead. As soon as the dough comes together add the salt and let knead for 5 minutes. Then turn up to level 2 and knead another 5 minutes. If you knead it by hand you need to work on it for at least 15 minutes. It should be soft and nice and have small bubbles. Cover with a towel or with cling-foil and let rest for 60 minutes.

Step 2
Cut 4 same size pieces from the dough and form 4 oval breads with them. Put them onto the baking tray so that the ends of the breads point to each and almost touch others (see picture)

Make incisions, if you like. Cover with a towel and let rest for another 30 minutes.

Preheat the oven to 250 C. Add the breads and spray the oven sides with water to create steam. Bake for 10 minutes. Turn the heat down to 200 C and bake the breads for another 30 minutes. If you make smaller bread rolls you need to bake them a shorter time!
