
Puff Pastry with Sesame

Often, when baking with puff pastry, I have some left-over dough. You don’t need to throw these, you can always use them for small salty pastries.
Very important is, you don’t knead together any left-over dough! Put them on top of each other and then roll them out again. Puff pastry will only puff up when put into layers, hence the name puff pastry. If you knead it, it will stick together and not get cooked inside.
Here, in this recipe, I had it easy, as I had stripes of left-over pastry. I just brushed them with egg-wash and sprinkled them with roasted sesame.

Ingredients
Leftover Puff Pastry
1 Egg yolk
1 tbsp cold Water
Roasted Sesame Seeds
Or Cumin, Poppy Seeds, roasted Garlic, Herbs
Instructions

Step 1
Roll out the leftover pastry into a square and cut smaller squares out of it. Put them onto a baking tray and brush them with the egg and water mixture.

Sprinkle with the sesame and bake in the oven at 200 C for 15 minutes.

Let cool and serve
