
Sommerrolls from Soy Leaves

I made summer rolls using soy leaves, which I got from an Asian store. They are gluten-free and vegan. You can also make these rolls using regular rice paper.
These summer rolls, as they are now called, originally come from Vietnam. They fill these rolls with raw vegetables and shrimp or chicken and serve them without cooking.
I really like them, and you can fill them with all kinds of things. They are traditionally served with sweet chili sauce as a dip.

Ingredients
1 Pack Soy Leaves (10 halve Leaves are in 1 Pack)
1 Carrot
½ Cucumber
150 g cooked Chicken
Herbs to taste
30 g Rice Noodles
Salad Leaves
Instructions

Step 1
Cut the carrot into julienne strips. Cut the cucumber into thin strips. Place the rice noodles in boiling water for a short time, then rinse with cold water. Cut the cold chicken into strips.

Lay the soy leaves out on a work surface (no need to soak them!) and place a few torn lettuce leaves on top.

Now fill with the remaining ingredients and roll up the leaves tightly.

Chill in the refrigerator. Then serve with sweet chili sauce.
