Semmeli ~ Swiss bread rolls that go with everything! They used to be served with meals in restaurants, but that’s no longer the case because they’ve become too expensive. It’s better value to buy a whole loaf of bread. But these Semmeli (or Bürli) are a MUST with bratwurst or cervelat sausage!
The Swiss are known for their good bread. They are also known for the names they give their bread rolls, such as Weggli, Semmeli, Mutschli, Chnurzelbroetli, or Bürli etc. This recipe is for a Semmeli, a bread roll that goes well with everything and has a crispy crumb. That’s how we like it best!

Ingredients
300 g whole wheat Flour
200 g Spelt Flour
1 tsp Salt
7 g dried Yeast
250-300 ml warm Water
Instructions

Step 1
Mix the flour with the salt, then add the dry yeast. Slowly add the water and knead everything well until you have a smooth dough that is not too soft. I make the dough in my food processor.

Cover the bowl with a cloth and let the dough rise for at least one hour.

Knead the dough again briefly, then cut it into approx. 8 equal pieces.

Shape the dough pieces into rounds by rolling them between the palm of your hand and the table, stretching the surface of the dough. Pinch the dough together well at the bottom.

Preheat the oven to 250 C.

Cover all the rolls on a baking sheet and let them rise for another 20 minutes.

Then make a deep cut in the middle with a sharp knife. Place the rolls in the oven and spray the oven and rolls with a flower sprayer. Place a container of water in the oven as well.

Bake at 250°C for 5 minutes, then reduce the temperature to 220°C and bake for another 25-30 minutes.
Notes
They turn out wonderfully crispy!
