Pancakes with Plantains

I often get plantains from my cleaning lady, and I try to find a lot of different ways to use them. Here in the Philippines, there are many different varieties of bananas, and each has its own flavor. Plantains here are Saba bananas. I used them to cook myself breakfast, namely these pancakes with plantains and strawberries with honey!

Ingredients
2 Saba Bananas/Plantain
2 tsp brown Sugar
1 tbsp Milk
2 Eggs
1 tsp Vanilla Sugar
1 tsp Baking Powder
50 g Flour
30 ml Milk
1 Pinch of Salt
1 tbsp Butter
Strawberries
Honey or Maple Syrup

Step 1
Put the sugar in a heavy saucepan, add the sliced bananas and bring to the boil. Turn carefully, add the milk and boil down.

Mix the ingredients for the pancakes together to make a thick batter. Melt the butter in a shallow pan and pour the pancake batter into the pan in three batches. Fry until you can see the air bubbles, then turn. Fry until cooked.

Pile the pancakes on a plate, add the bananas, top with a few strawberries and drizzle with honey.
