Banana Pancakes – Daughters Guest Entry

I promised my mother to cook my banana pancakes for her. And so I did, when she came for a visit to Switzerland. It was a perfect time, then I had my friend over from the USA for a visit. So I had to serve a big variety of foods for breakfast anyway.
I love these banana pancakes, as you don’t need to add any sugar. Ripe bananas are sweet enough! I also use whole-wheat flour, so I don’t have to have a bad conscience.

Ingredients
4 ripe Bananas
1 Pinch of Salt
1 tsp Baking Powder
4 tbsp molten Butter (or 2 tbsp Butter and 2 tbsp Coconut Oil)
180 ml Almond Milk
100 g Oats (gluten-free)
150 g Whole-wheat Flour (gluten-free)
Instructions

Step 1
Squish the bananas with a fork, then beat them until they are all soft and almost liquid. Add all other ingredients and mix well together.

Melt some butter in a flat pan and add some of the dough. Fry the pancakes in portions. As I use wholewheat flour the pancakes are darker as the ones with plain flour.

Step 3
Serve the pancakes with chocolate sauce, cinnamon sugar, honey, fresh berries or jam.
Notes

– If you don’t like Bananas, use Eggs.
