
Fried stuffed Eggs

Fried stuffed eggs — a great way to use up all those Easter eggs you’ve had enough of. Why not try serving them a different way?
I love experimenting with eggs! There are so many things you can do with them! I really enjoy stuffing them, often with all kinds of flavor enhancers like tomatoes, pesto, herbs, or olives. But I would never stuff them with food coloring, because you can easily add color yourself using vegetables, spices, or simply what nature provides!
This time, I fried my eggs until they were crispy, then mixed the yolks with some Sriracha mayonnaise. Sriracha is a chili sauce, so watch out—it’s going to be spicy!

Ingredients
8 cooked Eggs
4 tbsp Flour
2 Eggs
5 tbsp Breadcrumbs
some Oil
3 tbsp Mayonnaise
2 tbsp Sriracha Sauce
some Parsley or Chives for Decoration
Instructions

Step 1
Cut the hard-boiled eggs in half. Remove the yolks from the eggs and place them in a bowl.

Mix all the egg yolks thoroughly with the mayonnaise and Sriracha sauce, then transfer the mixture to a piping bag.

Coat the egg whites first in flour, then in beaten egg, and finally in breadcrumbs. Fry in hot oil until crispy on both sides. Let cool on a paper towel.

Step 4
Place the fried shells on a platter with the hole facing up, then pipe the egg yolk mixture into the hole. Garnish with parsley or chives.
