
Meatloaf Pie

Meatloaf is wonderfully versatile, so I used it to make a meatloaf pie!
I mixed in cubes of raclette cheese and bacon, and you can season it generously, because the meatloaf alone is relatively bland. Baked in crispy puff pastry, I don’t think anyone can resist it! It doesn’t take much work, so I added a few decorations on top, a lattice made from leftover dough. Vary it with garlic or onions, dried tomatoes or capsicum, more herbs to taste, and much more!

Ingredients
250 g Puff Pastry
1 kg uncooked Meatloaf
100 g Raclette Cheese, diced
100 g Bacon diced
2 Spring onion, chopped
Pepper
Paprika
Chili
Herbs to taste
1 Egg yolk for brushing
Instructions

Step 1
Mix the meatloaf with the raclette cheese, bacon, spring onions, and spices very well.

Grease a round tart pan. Roll out the puff pastry thinly, slightly larger than the tart pan. Place the dough in the pan and pull up the edges, cutting off any excess. Cut long strips from these scraps for decoration.

Pour in the mixed meatloaf mixture and smooth it out.

Place the strips across the top, leaving plenty of space between them. Fold every other strip back halfway and place a strip lengthwise over it. Leave a little space, fold the first, third, and fifth strips back, and place another strip lengthwise over them. Continue until you have created a woven pattern with the strips of dough. (see pictures) You can also use the remaining strips to make a mesh for decoration. Brush with beaten egg yolk.

Bake in the oven at 150°C for 1 hour, then increase the temperature to 180°C and bake for another 10 minutes. Normally, quiches are baked at higher temperatures, but since the meatloaf needs to be cooked slowly so that it rises nicely, we start at a lower temperature here.
