In the «Cook my recipe» group, I was allotted Barbara’s Spielwiese and so I remixed this Campari Amalfi from her blog!

I’ve known Barbara for a long time, she was one of the first bloggers I followed. She has a lot of recipes on her blog, which she has been running since 2007, and the pictures are mostly taken in her meadow, which is probably why it’s called Barbara’s Spielwiese. She says: “I usually don’t have much time to cook and bake, so things have to be quick. – Uncomplicated, as healthy as possible, I like lots of vegetables. I get bored if it’s always the same thing, I like variety – in life and on the plate.” I really like that, because I think the same way.

And it almost worked once, with a face-to-face meeting in Hong Kong! Unfortunately, only almost, but Barbara, what is not yet can still be!

It’s definitely worth having a look at her site a few times, you’ll find great recipes and, above all, lots of Asian combinations!

Campari Amalfi immediately appealed to me, because I love Campari and have already mixed various drinks with it. For example, quite simply a Campari Spritz, using Campari instead of Aperol! Very refreshing! Barbara says: “It is named after the Amalfi Coast, where citrus fruits thrive. But it was invented in Italy’s northernmost city, Monaco di Baviera. Bartender Andreas Till created it in the Pacific Times Bar in Munich. And from there it has since conquered the world.”

And now there’s this Campari Amalfi, which is incredibly delicious! I had to change it slightly because you can’t get all the original ingredients here. But that didn’t matter at all, the drink was mega delicious!

Ingredients

2 large Glasses

  • Ice cupes

  • 80 ml Campari

  • 50 ml Fresh Grapefruit Juice

  • 150 ml Bitter Lemon (we didn’t have any, just used Calamansi Spritz)

  • Grapefruit Slices

  • 150 ml Prosecco (optional)

Instructions

Step 1

Mix the Campari and grapefruit juice together and pour into the glasses.

Step 2

Add the calamansi juice and ice cubes. Top up with the Prosecco.

Step 3

Garnish with a slice of grapefruit and serve immediately. Cheers!

Notes

I added Prosecco because it lacked the bitterness and fizz of bitter lemon!
