Ham in Bread Dough

Ham in bread dough – it’s actually quite simple! You need bread dough and rolled ham, you can even buy cooked ham in Europe. What I will certainly do next time is decorate the bread with flowers made from dough or something. Or with cut-out figures, like cookies.

But I didn’t have time this time, because my 20 guests were at the door. They really liked the ham in bread dough and there wasn’t much left over. I had to hurry to make sure I got some of it. That’s how it goes with food that you don’t get every day.

Ingredients

  • 1 rolled Ham, approx. 1 kg, smoked, and or cooked. If it’s not yet cooked, simmer it in hot water for 90 minutes. Take the net off

  • Bread Dough

  • 700 g whole-wheat Flour

  • 11 g dried Yeast

  • 3 tbsp Olive Oil

  • 2 tsp Salt

  • approx. 400-420 ml warm Water

  • 1 Egg yolk for brushing

Instructions

Step 1

Mix the flour with the salt, then with the olive oil and yeast.

Add the warm water and knead into a soft dough using a food processor. Cover and leave to rest in a warm place for approx. 2 hours.

Shape the dough into a ball and cut a cross in the top. Now fold out the 4 cut parts and roll the dough slightly flat.

Place the rolled ham in the middle of the dough and place the two dough flaps on the right and left over the ham, pressing them together well. Now place the dough flaps over the ham from above and below and press down firmly.

Grease a gratin dish and place the ham in the pastry in the dish with the seams facing downwards. Cover and leave to rest for another 10 minutes, meanwhile preheat the oven to 200 C degrees.

Brush the bread with beaten egg yolk and bake in the oven for approx. 1 hour.

If you have a thermometer, you can go by degrees, the ham is done at 70 C degrees, please take it out of the oven at about 65 C degrees, as it will continue to cook in the hot bread. Mine was baked just right after 1 hour!

Leave to cool slightly and then slice the bread down the middle all the way round. Remove the lid and cut it into pieces. The bread is wonderfully crispy.

Remove the ham from the bread and slice thinly. It can be served with mustard.
