Simple Whole-wheat Bread

Good bread doesn’t always have to be complicated. Of course, bread with a long rising time is looser and usually tastes better, but sometimes you’re in a hurry and a quick and easy whole-wheat bread is just right.

It’s so easy that even bread baking beginners have little problems with it.

If you wish, you can use white flour or even use spelt, add seeds or walnuts. This simple bread is just right if you want to bake in a varied and uncomplicated way.

Ingredients

  • 500 g Whole-wheat Flour

  • 5 g dried Yeast

  • 5 g Salt

  • 3 tbsp Sunflower Oil

  • 300 ml warm Water

Instructions

Step 1

Mix the flour with the dry yeast, then add the oil and warm water and knead in the food processor on speed 1. As soon as the dough comes together, add the salt.

Now continue kneading on speed 2 until the dough no longer sticks to the sides of the bowl, this will take about 8-10 minutes.

If you want to knead the dough by hand, you can; simply knead it until it no longer sticks to the tabletop and is nice and elastic. This takes a good 15 minutes and results in beautiful upper arms 🙂

Cover the bowl with a damp cloth or, as I do, a shower cap and leave to rest in a warm place for about 2 hours.

After the resting time, the dough should have risen to about twice its size. Remove from the bowl onto a floured surface and knead again by hand, then stretch the dough out a little and roll it up. Now stretch the surface by pressing the palms of your hands down on both sides of the roll, pressing the dough under the bread. Continue until you have a nice surface and an oval loaf. Pinch the dough under the bread so that there is no seam.

Now roll the bread in some coarse corn or sesame seeds and place on a baking tray. Make incisions with a very sharp knife – you can be creative here – and leave to rest covered with a cloth for 20 minutes.

Meanwhile, preheat the oven to 250 C degrees.

After the resting time, place the bread in the hot oven, fill a second baking tray with water and spray the oven walls with water. Close the oven immediately. This creates steam, which helps the bread to rise.

Bake for 10 minutes at 250 C degrees, then release the steam, remove the second tray and reduce the temperature to 220 C degrees. Bake for another 10 minutes, then reduce the temperature to 200 C degrees and finish baking the bread for another 20 minutes.
