Homemade Herb Pasta with Fish

Homemade herb pasta with fish and coconut milk…. Yes, it sounds terrible, doesn’t it? Well, sometimes when you only have a few ingredients at home, you have to get creative. I was a bit skeptical myself until I tried the sauce, and my hubby said: “Wow, I really like it!”
It was right up his street, I know, because he loves his anchovies on pizza, in tomato sauce and even on crostini. You have to be a fish lover and especially an anchovy lover to like this sauce!

Ingredients
1/2 Portion Pasta Dough made into Noodles (check step 1)
3 Cod Fillets
1 can Anchovies
1 Lemon, the juice
1 Lime, the juice
250 ml Coconut Milk
Paprika
Pepper
Chili
No Salt!!! Anchovies are very salty!
2 tbsp black Olives, sliced
2 tbsp Capers

Step 1
½ Portion of this Pasta, add 3 tbsp chopped Parsley.

Step 2
Process the pasta up to number 4 in the pasta machine or roll out thinly by hand. Then cut the pasta into wide noodles by hand.

Heat the anchovies in a wok with 1 tbsp of the oil in which it is kept and fry until it has become liquid.

Add the lemon and lime juice and add the fish fillets cut into strips. Simmer briefly. Pour in the coconut milk and season everything well. You don’t need to add any salt, as the anchovies are already very salty! Slice the black olives and add with the capers.

Meanwhile, cook the pasta for 5-8 minutes and drain. Add the pasta to the sauce and mix well. Serve hot.
