Rustic Bread Rolls

Rustic bread rolls are easy to make, no big kneading, no difficult ingredients, but they take time, lots of time to rise.

This dough is actually a pizza dough that can also be used for many other things. I used it to make rolls, which we then served with sausage and salad. They become very crispy.

Ingredients

  • 1 kg Pizza Flour 00

  • 6 g fresh Yeast

  • 620 g cold Water

  • 22 g Salt

  • 30 g Olive Oil

Instructions

Mix the flour with the salt.

In a container, mix the crumbled yeast in the cold water. Then add to the flour, add the olive oil and mix with a large spoon until everything forms a dough. It doesn’t need much time.

Cover and leave to stand for 30 minutes.

Then fold, I simply folded the sides all around with a wooden ladle. Leave to stand for 30 minutes. Repeat the folding, leave to stand for another 30 minutes and fold again, i.e. 3 times in total.

Leave to rise in the fridge overnight (8-12 hours). It grows very high, so use a large oiled bowl!

The next day, take the bowl out of the fridge and leave to warm up for about 1 hour.

Heat the oven to 250 C degrees.

Place the dough on a work surface, it will spread out and become relatively flat. Cut approx. 12 irregular pieces from the dough and place on a baking tray lined with baking paper.

Sprinkle the dough pieces with a little flour and bake in the oven at 250 C degrees for 10 minutes with lots of steam, I poured water into a baking tray, then reduce the heat to 200 C degrees and bake for another 15-20 minutes.
