Gluten-free Crêpes with Cinnamon-Apples

I wanted to serve my daughter a dessert other than cake for once. So I made gluten-free crêpes with cinnamon apples. This dessert is a little lighter than a cake, but still very filling. The crêpes can also be filled with a hearty filling, as they are not really sweet.

My blog is slowly filling up with gluten-free recipes. Here are more and here are the rules, you have to abide, if cooking gluten-free!

Ingredients

For 5 Crêpes:

  • 90 g gluten-free rolled Oats

  • 70 g Rice Flour

  • 35 g Cornstarch

  • 1 tbsp ground Flaxseed

  • 1 tbsp Sugar

  • 1 tsp Baking Powder

  • 350 ml Milk

  • 1 tbsp Lemon Juice

  • 1 tsp Vanilla Extract

  • Filling:

  • 3 Apples

  • 2 tbsp Sugar

  • 2 tbsp Milk

  • 1 tbsp Lemon Juice

  • 1 tsp Cinnamon

  • ½ tsp Cornstarch

Step 1

Mix the dry ingredients of the crêpes together, then mix in the wet ingredients. Leave this mixture to rest for 30 minutes so that the oats and flaxseed can swell.

Then heat a little oil in a wide pan and pour in a little of the mixture. Swirl the pan slightly so that the mixture covers the entire base. Do not pour in too much of the mixture, otherwise you will end up with hard pancakes instead of crêpes! Fry for approx. 3-4 minutes, then turn and fry the other side too.

Meanwhile, peel the apples for the filling and cut into small pieces.

with all the other filling ingredients in a pan and heat slowly. Simmer for 5-7 minutes, then remove from the heat.

Place the crêpes on plates and fill with the apple filling, serve with whipped cream if desired.

Notes

They are also delicious with ice-cream!
