Chicken Salad with Apple and Corn

Chicken is so versatile to use, like this chicken salad with apple and corn.
My mom often made a chicken salad for visitors with canned fruit in it, it was the standard starter, and everyone loved it. Mine is a little different than my mom’s, unfortunately she never wrote anything down, so I don’t have exact recipes.

Ingredients
400 g Chicken Breast
2 Apples
1 can Corn
1 bunch of Chives or 4 Spring Onions
1 L Chicken Broth
1 Lemon, the juice
3 tbsp Mayonnaise
2 tbsp Ketchup
1 tbsp hot Mustard
Salt and Pepper
Paprika
Curry Powder
2 tbsp Red Wine Vinegar
4 tbsp Olive Oil

Step 1
Boil the chicken meat in the chicken broth for 30 minutes, then let it cool. Then chop the meat into small pieces.

Mix the ingredients of the dressing together. If the dressing gets too thick add some water.

Peel the apples and cut them into slices, then into chunks. Add them to the lemon juice. Mix the chicken with the apples and the corn, add the chopped chives and mix.

Then add the dressing and mix well. Let stand for 30 minutes, then serve on lettuce leaves.
