Ginger Chicken Thigs with spicy Miso Sauce

Ginger chicken thighs with spicy miso sauce are very simple and delicious! In addition, I serve a miso sauce, nice and spicy because miso gives wonderful flavor! I love it very much and I like to cook with miso.

There are very many types of miso. No matter what kind of miso it is, it starts with a mold spore called Aspergillus oryzae, also known as koji. This ancient fungus is found in countless East Asian fermentation processes. Miso is often identified by its color, but the labels “red” or “white” don’t even begin to describe the more than 1,300 varieties of miso that exist in Japan and around the world. In Japan, you can go to miso stores, which are a bit like delis, and buy each miso variety by weight.

Ingredients

  • 12 Chicken Thighs/p>

  • Marinade:

  • 3 tbsp Sake

  • 4 cloves of Garlic, finely chopped 5 cm Ginger, finely chopped

  • 5 cm Ginger, finely chopped

  • 1 tbsp Oil

  • Miso Sauce:

  • 5 tbsp red Miso

  • 2 tbsp Mirin

  • 1 tbsp Chili Oil not the flakes!

  • 1 tbsp Sriracha

Instructions

Step 1

Using scissors along the cartilage at the top of the chicken thighs, cut through the meat and skin, poking the meat down to create a sort of lollipop.

Put this in a freezer bag, add the marinade and seal the bag. Now “knead” the meat so the marinade gets everywhere. Let marinate for 1 hour.

Place the oven rack over a baking sheet and place the marinated chicken legs on it. Roast in the oven at200 C degrees for 20 minutes, then turn the legs and roast again for 20 minutes. The fat will drip down into the baking tray.

Step 4

Meanwhile mix the ingredients for the sauce and boil briefly to dissolve everything, then let cool slightly. Serve the roasted chicken legs with the sauce.
