Spinach Bread with Ham and poached Egg

Spinach bread with ham and poached egg is a healthy, quick breakfast that keeps you full for a long time. And what’s better than a good, fortifying breakfast when the day is long? Exactly… nothing is better than a full stomach to start the day well. 

When I was a kid, I had a lot of trouble eating breakfast. It just didn’t go down! My dad would cut fine bread and spread it with butter and jam, after 3 bites I had enough. Today, breakfast is my most important meal! And breakfast should be different every day, but not take forever to make!

Ingredients

  • 1 slice whole meal Bread, toasted

  • 1-2 Slices cooked Ham

  • 50g Spinach

  • 1 tbsp Olive Oil

  • 2 cloves of Garlic, chopped

  • 2 Eggs

  • 1 tbsp Vinegar

  • Salt and Pepper

Instructions

Step 1

Fry the garlic cloves in the oil, then add the spinach. Fry until it has fallen together, season with salt and pepper.

Step 2

Meanwhile, bring some water with 1 tablespoon of vinegar to a boil and poach the eggs in it for 4 minutes.

Step 3

Put the toasted bread on a plate, cover it with the ham. Put the spinach on top and place the poached, drained eggs on top. Season with salt and pepper.
