Ich liebe die leichte bittere Note der Chicorée! Man kann ihn ganz toll mit anderen Zutaten verbinden, damit es ein rundes Essen wird. Dieser Chicorée Salat mit Speck und Parmesan Dressing ist mega lecker. Ich mag ihn als Salat oder gekocht oder überbacken, oder gar als Suppe, als Finger-food, egal wie, er kommt bei mir öfters auf den Tisch! Diesmal habe ich einen Salat serviert und meinen Gästen vorgesetzt. Damit er schön aussieht, gibt man ein paar kleine Zutaten dazu und arrangiert es schön. Ich muss nicht erwähnen, dass er sehr gut ankam bei meinen Freunden.

I love the bitter note of chicory! You can pair it very well with other ingredients, to make it less bitter. I love it as a salad, cooked or gratinee, or even as Soup, as Finger-food, no matter how you serve it, I use it quite often. This time I made a salad and served it to my guests. To make it look nice I added a few small ingredients and arranged it nicely. I don’t have to say that my friends loved it!

Chicorée Salat mit Speck und Parmesan Dressing

Für 4 Personen:
3 weisse Chicorée
2 rote Chicorée
100 g Speck
2 Baumnüsse pro Person
1 Handvoll Cranberries
Ein paar Micro Kräuter

Dressing:
100 ml Franzoesische Salatsauce
30 g geriebener Parmesan

Dem Chicorée hinten am Strunk einen Kegel herausschneiden, das ist der bitterste Teil davon. Ein paar Blätter ganz lassen, den Rest in schmale Streifen schneiden. Den Speck auch in schmale Streifen schneiden und in einer Pfanne braten, bis alles Fett ausgelassen ist. Gut abgiessen. Auskühlen lassen. Dann den Speck mit dem Chicorée vermischen. Die Salat Sauce mit dem geriebenen Parmesan gut schütteln und zum Salat geben. Ein paar ganze Chicorée Blätter auf die Teller legen, den Salat darauf geben. Nun mit je 2 zerbrochenen Baumnüssen bestreuen, ein paar Micro Kräuter darüber geben und ein paar Cranberrys. Sofort servieren.

Für 4 Personen:
3 white Chicory
2 red Chicory
100 g Bacon
2 Walnuts per Person
1 Handful Cranberries
Some Micro Herbs

Dressing:
100 ml French Dressing
30 g grated Parmesan

Cut a cone out at the back of the chicory, this is the most bitter part of it. Set aside a few leaves, then slice the rest of the leaves thinly. Slice the bacon and fry in a pan to release the fat, drain well and let cool. Now mix the chicory with the bacon. Mix the salad dressing with the parmesan well and give to the salad. Mix well. Put some of the reserved leaves onto the plates, add the salad. Then top with 2 broken up walnuts each, a few micro leaves, and some cranberries. Serve immediately!
