Wenn’s schnell gehen muss, koche ich auch Fertigteigwaren. So hatte ich eine Packung Ravioli mit Spinat und Ricotta-Fuellung zuhause. Einen weiteren Blick in den Kuehlschrank brachte eine Aubergine, Rucola und Mozzarella zutage und schon war mein Menue klar. Einfach und schnell, das ist das Motto bei diesem Gericht!

Sometimes even I cook with prepared pasta, like these Ravioli filled with spinach and ricotta. I was in a hurry and did not have a lot of fresh food at home. Another look into the fridge showed me one eggplant, rocket and mozzarella. OK, then we will make dinner with these. It’s quick and easy and perfect if you don’t want to be cooking a long time.

Fuer 2 Personen:
250 g Ravioli mit Spinat-Ricotta Fuellung (oder andere Fuellungen)
1 Aubergine
3 Knoblauchzehen, gehackt
2 El Olivenoel
1 Fruehlingszwiebel
1 handvoll Rucola
1/2 Mozzarella Kugel
geriebener Parmesan nach Wunsch
Salz und Pfeffer
Rosmarin und Paprika
etwas Chili

Die Knoblauchzehen im Oel anbraten und die in kleine Wuerfel geschnittene Aubergine und die gehackte Fruehlingszwiebel zugeben, alles ganz gut wuerzen, es darf ruhig scharf werden. Diese nun ca 10 Minuten lang mit mehrmaligem Ruehren braun braten. Unterdessen die Ravioli nach Packungsanweisung kochen. Die gekochten und abgegossenen Ravioli zu der Aubergine geben, Rucola und gehackten Mozzarella zugeben, gut mischen und sofort servieren. Wer mag kann Parmesan darueber streuen.

For two persons:
250 g Ravioli with spinach ricotta filling (or any other filling you like)
1 Eggplant
3 cloves of Garlic, chopped
2 tbsp Olive Oil
1 Spring-onion
some fresh Rocket
1/2 Mozzarella Ball
some grated Parmesan to taste
Salt and Pepper
Rosemary and Paprika
Chili

Fry the chopped garlic in the oil and add the diced eggplant and chopped spring-onion. Season very well. Fry for approx 10 minutes until they are nice and crisp. Meanwhile cook the ravioli as indicated on the package. Add the cooked and drained ravioli to the vegetable and add the rocket and chopped mozzarella. Serve immediately. You can sprinkle them with grated Parmesan if you like.
