South African Broccoli Salad

On one of our travels to South Africa we got served a very tasty and refreshing broccoli salad. It was a meal with many small dishes, all traditional South African. We ordered more of this salad, as we all loved it so much!

At home, I immediately went onto my task to copy the salad; I needed several trials until I succeeded with the exact taste.  Since then this is one of our favorite salads!

It’s wonderfully crisp, and the dressing goes perfectly with the lemony flavor. It’s simply wonderful!

Ingredients

  • 500 g Broccoli

  • 100 g Sunflower Seeds

  • 150 g Sultanas

  • 50 g Almond Slivers

  • 150 g Bacon

  • Dressing

  • 150 g Greek Yoghurt

  • 2 tbsp Mayonnaise (or Miracle Whip)

  • 1 tsp Honey

  • 3 tbsp Vinegar

  • Juice of 1 Lemon

  • some Sea Salt

  • Ginger Powder

  • Cumin Powder

  • Coriander Powder

  • Nutmeg

  • black Pepper

Step 1

Chop the bacon and fry until crispy.

Step 2

Meanwhile cut the Broccoli into very small pieces; don’t forget to peel the stems, as the skin makes it hard to digest!

Now add the sultanas, sunflower seeds, almond flakes and mix well.

Step 4

Mix the salad sauce together and pour over the salad. Let marinate for 30 minutes.

Notes

This salad is perfect to grilled meats and fish. The sauce fits well to any vegetable Salads! More Recipes from South Africa!
