Shrimps with Mango Salsa

I admit, this recipe is not from me, but from Chef Marco! He showed us in a demonstration, how easy it is to create a a delicious starter (or main meal). I just changed some ingredients to make it more to my taste.
But this starter is one of my favorite, as the dish is really like it looks, wonderful colorful, just yummy and so easy!

Ingredients
12 medium size Shrimps or 6 big Shrimps with shell on
1 ripe Mango
some fresh Coriander
1 Lemon, the juice
Salt and Pepper
some lettuce leaves opt
some Cherry Tomatoes opt

Step 1
Wash and peel the shrimps and take the head off. Don’t throw the heads, we use them as decoration. Take the black vein off on the back!

Cut the Mango along the stone into two pieces and peel it. Cut 5 mm thin slices and cut them into small dices. Put them into a bowl, add the lemon juice and some chopped coriander.

Heat some oil in a flat pan and fry the shrimps and the heads until light reddish. Don’t cook too long or they turn rubbery! Season with salt and pepper.

Put some lettuce on a plate, add some cherry tomatoes, then add the shrimps and heads and the Mango salsa.
