Ich gebe zu, die Idee zu diesem Rezept gehoert nicht mir, sondern Chef Marco. Er hat uns bei einer Demonstration dieses Rezept empfohlen, ich habe es dann fuer mich und meinen Geschmack etwas abgeaendert. Aber das Gericht bleibt eines meiner Liebsten, denn es schmeckt wirklich so wie es aussieht. Bunt, „gluschtig“, und einfach so dass einem das Wasser im Mund zusammenlaeuft. Und dabei ist es im Nu gekocht!

I admit, this recipe is not from me, but from Chef Marco! He showed us in a demonstration, how easy it is to create a a delicious starter (or main meal). I just changed some ingredients to make it more to my taste. But this starter is one of my favorite, as the dish is really like it looks, wonderful colorful, just yummy and so easy!
Fuer 2 Personen:
12 mittelgrosse Garnelen oder 6 grosse Garnelen mit Schale
1 reife Mango
etwas Korianderblaetter
1 Zitrone, den Saft
Salz und Pfeffer
Einige Kopfsalatblaetter opt
einige Kirschtomaten opt
Die Garnelen waschen, bis zum Schwanz schaelen und den Kopf abnehmen. Den Kopf als Dekoration behalten. Die schwarze Vene entfernen (im Rueckgrat
Die Mango dem Stein entlang aufschneiden und schaelen, dann in ca 5 mm dicke Scheiben schneiden und kleine Wuerfelchen daraus machen. In eine Schuessel geben und mit dem Zitronensaft mischen. Etwas Koriander hacken und dazu mischen.
Wenig Oel in einer Bratpfanne erhitzen und die Garnelen mit den Koepfen darin beidseitig rosa braten. Nicht zu lange braten, sonst werden sie gummig! Etwas Salz und Pfeffer dazu geben.
Einen Teller mit einigen Salatblaettern auslegen, ein paar Kirschtomaten darauf geben, die Garnelen mit den Koepfen darauf anrichten und die Mango Salsa dazu geben.

For 2 Persons:
12 medium size Shrimps or 6 big Shrimps with shell on
1 ripe Mango
some coriander leaves
1 Lemon, the juice
Salt and Pepper
some lettuce leaves opt
some Cherry Tomatoes opt
Wash and peel the shrimps and take the head off. Don’t throw the heads, we use them as decoration. Take the black vein off on the back!
Cut the Mango along the stone into two pieces and peel it. Cut 5 mm thin slices and cut them into small dices. Put them into a bowl, add the lemon juice and some chopped coriander.
Heat some oil in a flat pan and fry the shrimps and the heads until light reddish. Don’t cook too long or they turn rubbery! Season with salt and pepper.
Put some lettuce on a plate, add some cherry tomatoes, then add the shrimps and heads and the Mango salsa.
