Our family evening/Birthday party is coming up soon. That’s when I will have 20 and more people for dinner here and I can work in my kitchen to serve them the best food ever. 

That also means there’s a lot to prepare, a lot to think and organize. And what I can prepare in advance I will prepare now.

These berry pralines are perfect, as they will be frozen. They are frozen because they contain fresh berries. The berries would spoil otherwise.

I will serve these pralines to coffee; I just take them from the freezer approx. 1 hour before serving.

Ingredients

For 18 Pralines from the Mini-Gugelhopf Silicon form:

  • (if you don’t have such a silicon form just use the ice-cube dishes)

  • 150 g Chocolate, either all dark or half/half dark and milk chocolate

  • a few berries each of Strawberries, raspberries, Blackberries and Blueberries

  • 150 g Chocolate, like above

Instructions

Step 1

Melt the first 150 g of chocolate either in the microwave or in a bain marie. Then fill the chocolate into a piping bag.

Step 2

Now fill the silicon form approx halfway up with the chocolate but be sure to pipe the sides as well. Move the silicon dish around so to cover the sides again well.

Freeze for 30 minutes.

Now add the berries either whole or cut into smaller pieces.

Melt the rest of the chocolate and fill it into a piping bag. Now cover the berries and fill in the silicon dish with this chocolate.

Step 6

Freeze for 1 hour or until the pralines will be eaten. Take them from the freezer 1 hour before serving.

Notes

This way you can keep the pralines for a long time, but maybe the family will eat them first.
