Broccoli is one of the vegetables all my family loves, so I use it often. These Broccoli Parmesan Patties are very easy and so yummy. I made a load yesterday, but nothing is left.

I like the bright colors of broccoli. They fit so well to any dish. You can eat them as a side or even as a meal by itself. Just serve them with a dip!

Ingredients

  • 1 large Broccoli

  • 3 Eggs

  • 30 g grated Parmesan

  • 80 g Flour

  • Salt and Pepper

  • some Garlic Powder

  • Oil for frying

Instructions

Step 1

Cut the florets off the broccoli and peel the stems. Then chop the broccoli. Heat a pot with 5 cm salted water and bring to a boil. Add the chopped broccoli and boil for 3 minutes. Drain well and let cool slightly.

Step 2

Mix the eggs with the salt, pepper and garlic powder, then add the grated cheese and flour. Mix well. My dough turned out a little too thick, so I added a little cold water.

Add the cooked broccoli and mix well.

Step 4

Heat the oil in a flat pan and fry tablespoon size patties on both sides until nicely browned.
