Taquitos – Mexican Finger-food

My taquitos are very international, because the recipe is actually Mexican, but I used Turkish Dürüm flatbreads, and I made them in Switzerland.
I used Dürüm because they are readily available in Switzerland, but originally you would have to make them with tortilla wrappers. Both are very similar in taste and are great for filled rolls.
My rolls are filled with minced meat and peperoni. Again, you can make many variations and fill them with chicken or vegetables as you like.
A taquito, taco dorado, rolled taco or flauta (Spanish for “flute”) is a Mexican dish that usually consists of a small, rolled-up tortilla containing a filling such as beef, cheese or chicken. Ingredients
For 24 small rolls:
12 large Dürüm or Tortilla wrappers
300 g ground Beef
100 g diced Ham
1 red Capsicum
2 cloves of Garlic, chopped
1 small onion, finely chopped
Salt and Pepper
Rosemary
Chili Powder
2 tbsp Olive Oil
100 g coarsely grated Cheese
1 Egg-yolk

Step 1
Heat the oil in a pan and cook the chopped onion and garlic until soft. Add the minced meat and diced ham, season, then add the capsicum cut into small cubes. Fry everything well. Leave the meat filling to cool briefly, then mix with the cheese.

Cut the dürüm in half and fill each half with 2 tablespoons of the filling. Roll up the dough tightly and place the rolls seam-side down on a baking tray lined with baking paper.

Brush the rolls with egg yolk and then bake in the oven at 180°C for approx. 30 minutes. The taquitos can be served warm or cold.
