Mushroom-Tomato Bread with Sauce Hollandaise

While we usually eat “real” dinner, meaning a full menu, it made me remember this mushroom bread my mom used to serve us every now and then when she had time to cook. I love it!!!

I too am from the (bread) supper generation, in our house we had a meal for lunch and then bread and cheese, or jam for dinner. My dad always came home for lunch back then, so a hot meal had to be on the table. Since one does not need a full meal twice a day and one had not the small change to serve up meat and/or vegetable twice in the day, we were served bread with something in addition.

Ingredients

  • 2 Slices of Bread

  • 1 Tomato sliced

  • ½ Tomato diced

  • 200 g Mushroom, washed and chopped

  • 3 Garlic cloves chopped

  • Salt and Pepper

  • Paprika

  • ½ Bunch Parsley chopped

Step 1

Make the Sauce Hollandaise, here is the recipe.

Put the bread slices on two plates and place the sliced tomato on top.

Step 3

Meanwhile, in a little butter, fry the garlic, then add the chopped mushrooms, diced tomato and season well. Fry everything well, then mix in the chopped parsley. Put the mushrooms on the bread.

Lastly

Meanwhile, make the hollandaise sauce and pour over it. Serve immediately.
