Cauliflower Salad

I love salads. Actually, it does not matter what kind of mixture it is, fresh, crunchy, spicy. And this cauliflower salad is crunchy and flavorful, just right.

My son once at a barbecue, as a little boy, made a list with name, hair color, eye color, size, favorite color and characteristic of our friends, mine was “eats always salad”.

Ingredients

For the spicy salad Dressing:

  • 2 tbsp Mustard

  • 1 tbsp Pesto

  • 2 tbsp Nature Yogurt

  • Salt and Pepper

  • dried herbs, like Parsley, chives etc.

  • 2 tbsp Soy Sauce

  • 4 tbsp Sonnenblumenöl

  • 5 Spritzer Aceto Balsamico

  • 5 tbsp Water

  • 1 can Anchovies, chopped

  • 2 Spring onions chopped

  • 1/2 Bunch Basil chopped

  • For the Salad:

  • 10 Cherry Tomatoes

  • 1 Cauliflower, divided into florets

  • 1/2 bunch chopped Parsley

  • if you like you can add one Avocado

Instructions

Step 1

Mix all ingredients for the dressing well. If your dressing is too thick add some cold water.

Step 2

Cook the cauliflower florets in salted water until crisp-tender, then drain well. Mix with the salad dressing while still warm and let marinate for about 30 minutes.

Step 3

Sprinkle with chopped parsley, and if you like add some avocado. You can also let the salad marinate longer.
