Zucchini Fritters – Gluten-free version included! We love zucchini and you can cook them in so many ways. Of course, I have many creative recipes on my blog!

How about Zucchini Gnocchi? My daughter made a gluten-free recipe, but you can also use normal flour. Or a creamy Zucchini Soup? Or Zoodles al Limone? Zucchini fit very well into Salads or Quiches. And they are perfect cooked in Butter, or as Antipasto or Carpaccio. You can use them in a Sauce for Pasta, in Risotto, or as Parcels with filling! Enough ideas???

And this time I made them as fritters! I made two variations, one of them gluten-free!

Ingredients

  • 2 Zucchini

  • 2 Eggs

  • 50 g Flour

  • 50 g grated Parmesan

  • Salt and Pepper

Instructions

Step 1

Slice the zucchini very thin and let them rest in a sieve to get rid of the water. Squeeze and pat them dry.

Step 2

Mix the eggs with the flour and parmesan and season. Now fry batches in some hot oil.

Step 3

For a gluten-free version I replaced the flour with a fine corn flour and I actually loved it better! It is tastier and crisper!
