Fried gnocchi with eggplant and spinach is a quick and very simple dish cooked with lots of vegetables. It couldn’t be easier!
Gnocchi can now be bought in supermarkets almost everywhere in the world. They are versatile and can be served in many different ways. They can usually be fried straight from the packet without boiling them first. But be careful, this doesn’t work with dried gnocchi! You can serve them with any morning sauce or cook them directly in the sauce. We like them any way they are prepared. Ingredients
400 g fresh ready-made gnocchi from the refrigerated section
1 Eggplant
2 Garlic cloves
1 Handful Spinach Leaves
Salt and Pepper
Rosemary
some Olive Oil
10 g Butter
some shaved Parmesan
Instructions

Step 1
Chop the garlic cloves and fry in hot oil. Add the finely diced eggplant and fry thoroughly. Season well, then add the spinach and cook briefly.

Meanwhile, remove the gnocchi from the package and shake off any excess flour.

Add the butter to the vegetables and allow to melt, then add the gnocchi to the pan, toss well, and fry thoroughly.

Step 4
Garnish with the shaved Parmesan and serve hot.
