Salmon with Coconut-Saffron Sauce

Once again, I will bring you a salmon recipe, this time it’s salmon with coconut and saffron sauce.

We love salmon because it can be cooked in so many ways. Sauces, marinades, dips – you can serve it with anything, and salmon always goes well with it! And this recipe couldn’t be easier!

Coconut milk, saffron, herbs… Ingredients I love! Saffron not only adds color, but also a great flavor! Coconut milk is used a lot in Asia, especially in curries, which become creamy thanks to this milk. Coconut milk is low in fat, calories, and cholesterol. It is a healthy alternative to dairy products. Coconut milk contains many vitamins and minerals.

Ingredients

  • 800 g Salmon in one piece

  • Salt and Pepper

  • 1 tsp dried Italian Herbs

  • Olive Oil

  • 1 tbsp Butter

  • 1 small onion, finely chopped

  • 1 clove of garlic, finely chopped

  • 1 tsp Broth Powder

  • 250 ml Coconut Milk

  • 1 big Pinch of Saffron

Instructions

Step 1

Grease an ovenproof dish with butter. Place the salmon fillet in the dish, drizzle with olive oil, then sprinkle with salt and pepper.

Bake in the oven at 180°C for 20 minutes. If the fillet is thick, bake for 10 minutes longer.

Meanwhile, melt the butter in a small saucepan for the sauce. Add the onion and garlic and cook until soft.

Then add all the remaining ingredients: coconut milk, saffron, herbs, and stock powder. Add a little salt and pepper and bring to a boil.

Once the sauce is boiling, reduce the heat and simmer for about 8-10 minutes.

Pour the sauce over the cooked salmon and serve with white rice.
