Andrea’s gluten-free Rice Noodle Dish

My daughter Andrea cooks: I have no choice; I have to cook gluten-free and sometimes it’s not that easy. But there are many Asian dishes that are naturally gluten-free. Andrea’s gluten-free rice noodle dish is one of them!

These rice plates can be used for much more than just Spring rolls! And I cut them into wide noodles and mixed them into my chicken dish. It was very good!!!

Ingredients

  • 3-6 Rice Plates as for spring rolls

  • 1 Chicken breast, cut into strips

  • 2 tbsp white Miso Paste

  • 150 ml Water

  • 1 tbsp Sunflower Oil

  • Asian Eggplants, cut into strips

  • Pack Choi, cut into strips

  • some Sweet and Sour Sauce

Step 1

Marinate the chicken strips in the miso paste. Then heat the oil and fry the meat in it. Add the water and simmer.

Step 2

Add the eggplants and pack choi after 5 minutes, put the lid on and simmer until the vegetables are soft.

Step 3

Meanwhile, soften the rice sheets in water. When they are soft, roll lightly and cut into wide noodles. Add these noodles to the vegetables when the vegetables are soft.

Step 4

Add sweet and sour sauce if desired. Allow to warm through for 5 minutes, then serve the dish.
