Avocado Springrolls

These avocado spring rolls are quick to make! And they are eaten just as quickly!

As you know, you can fill these spring roll sheets with lots of things, you just need a little imagination! I used ripe avocados and added dried tomatoes. It really enhanced the flavor, and the guests were all over it!

Ingredients

  • 20 Springroll Leaves

  • 2 ripe Avocados

  • ½ Lemon, the Juice

  • 30 g dried Tomatoes in Oil, chopped

  • Salt and Pepper

  • Chili Flakes

  • Oil

Instructions

Step 1

Mash the avocados with a fork, mix with the lemon juice and tomatoes, then season to taste.

Step 2

Lay out the spring roll sheets on a work surface and place 2-3 tablespoons of the avocado mixture on the bottom third. (see pictures)

Step 3

Fold the bottom edge over. Then fold in the sides. Finally, roll up the roll from bottom to top.

Step 4

Heat the oil in a shallow pan and fry the spring rolls until golden brown.

Notes

Serve with Sweet Chili Sauce or Lime Mayonnaise.
