Micky’s Sweet Potato Wrap

Micky, our wrap specialist, has cooked for us again! He made his Micky’s Sweet Potato Wrap with chicken. Micky eats very consciously, lots of protein, lean meat, healthy vegetables, I no longer recognize my child who a few years ago would order lasagna as an appetizer and a pizza for the main course at the pizzeria and then a large ice cream!!!! But I’m glad he eats healthily and looks after himself, because you only live once!

But let’s get back to his wraps! He is our specialist, as he already has a few recipes here on the blog. For example Micky’s baked Chicken Wraps or his “Come-home-late-don’t-want-to-cook-too-much-crap-Wrap”. His wrap today is very tasty, with cooked sweet potato and chicken.

Ingredients

  • 4-6 large Tortilla Wraps

  • 500 g Chicken, cut into large pieces

  • 500 g Sweet Potatoes, finely diced

  • 1 red Capsicum, finely diced

  • 2 sachets of Burrito Seasoning

  • Iceberg lettuce leaves

  • Guacamole

  • Sour Cream

  • grated Cheese

Instructions

Step 1

Boil the sweet potato cubes in salted water for 5 minutes, then drain.

Step 2

Meanwhile, heat some oil in a shallow pan and fry the chicken pieces in it. Add the capsicum and season with the 2 sachets of burrito seasoning.

Step 3

Add some water and simmer until the meat is cooked through.

Step 4

Mix the sweet potato cubes with the meat and serve with the warmed tortillas. Everyone fills their wrap however they like.
