One-Pot-Gnocchi

You get the best ideas when you’re in a hurry! At least that’s the case with me! I was in a hurry and didn’t have much patience, so I needed something that could be cooked quickly. Gnocchi from the supermarket are perfect for this, but a quick sauce was needed. I hate ready-made sauces and never have them at home. The only thing I always have in stock are the jars of tomato sauces, but I didn’t want to use them. So, I found a tin of cream of tomato soup that I had in stock for cold winter days. That’s how the One-Pot-Gnocchi came about! What works with pasta also works with dried gnocchi!

I tried it and the result was wonderfully creamy gnocchi with tomato soup sauce!

Ingredients

  • 600 g ready-made Gnocchi from the fridge in the Supermarket

  • 1 tin of cream of Tomato Soup (400 ml)

  • 100 g Crem Cheese

  • 50 g Blue Cheese

  • 30 g grated Parmesan

  • 1 bunch Parsley, chopped

  • Pepper

  • Rosemary

Step 1

Heat all the ingredients in a pan and simmer gently.

Step 2

Use a toothpick to check whether the gnocchi are soft, this will take about 10-15 minutes. Season to taste if necessary. Sprinkle with parmesan and serve.
