Jenny’s Queque de Plantano – Peruvian Banana Bread

Jenny’s Queque de Plantano took part in the Culinary World Tour to Peru and immediately caught my eye, as I very often receive plantain/cooking bananas from my cleaning lady. I have used them in different dishes, in different ways of cooking, but I didn’t know that they could also be used in cakes. Well, Jenny enlightened me and I am grateful to her.

I’ve made 2 small cakes out of it and will give one to my cleaning lady, she’ll be delighted!

Ingredients

  • 3 yellow to black Plantains, Saba bananas in the Philippines, which are small and thick

  • 75g soft Butter

  • 100g brown Sugar

  • 2 Eggs

  • 2 tbsp Milk

  • 1 tsp Vanilla extract

  • 230 g Flour

  • 2 tsp Baking Powder

  • 100g Chocolate drops

  • Optional: another Plantain for decoration

Instructions

Step 1

Place the bananas in the bowl of the food processor and blend with the mixer. Add the softened butter and sugar and mix well. Also add the eggs one at a time, then mix in the milk and vanilla extract.

Step 2

Add the flour, baking powder and chocolate drops and mix. Pour into 1 or 2 greased cookie tins. Decorate with thinly sliced plantain.

Step 3

Bake in a fan oven for 45-50 minutes. (A little longer depending on the size of the cake tin)
