Gluten-free Cauliflower Gnocchi

Hello, here is the gnocchi crazy lady! Yes, I love them and always on my birthday my Italian mama would cook them for me.! These were the traditional potato gnocchi back then, now they make them out of anything. Here is the gluten free cauliflower gnocchi version. They are very simple and mild, you can serve them with any sauce, or like me, just with crispy fried bacon.

Ingredients
1 Cauliflower, steamed until soft and well drained
1 Egg
½ TL Salt
30 g Asiago or Parmesan Cheese, grated (Asiago is more salty)
Ca. 200 g gluten-free Flour (more or less, depending on the size of the cauliflower)
150-200 g Bacon
2 Garlic cloves, chopped
Italian Herbs
Pepper

Step 1
Bring water with salt to a simmer. At the same time fasten a string over it.

Puree the cooked cauliflower in a mixing glass. Put it in the bowl of the food processor and mix with the egg, salt, cheese. Now slowly add the flour while mixing until a soft dough is formed. Remember, the less flour, the softer and better the gnocchi will be. Therefore, I just barely added flour until the mixture was pipeable. Put the mixture into piping bags and cut off the tip to about 1-1.5 cm in diameter.

Now as in the video, slowly squirt the mixture into the water, brushing over the string every 2 cm or so to cut it off. Once the gnocchi float on top, they are cooked. Skim and mix with the crispy fried bacon and garlic seasoned with Italian herbs and pepper. Serve immediately.
