Salad doesn’t always have to be lettuce leaves. This quick and easy tofu salad proves that. It’s refreshing, Asian-inspired, and definitely a salad no one has had before. Plus, it’s gluten-free and vegan!

Ingredients
250 g silken Tofu
1-2 Avocados
chopped Spring onion
Sesame Seeds
2 Garlic cloves, grated
1 tsp Ginger, grated
2 tbsp Soy Sauce (gluten-free)
1 tsp Sesame Oil
½ tsp Vinegar
½ tsp Sugar
Salt and Pepper
2 tbsp Water
Dressing

Step 1
Cut the tofu and avocados into slices. Alternatively, arrange these on a platter.

Mix the dressing ingredients well together and pour over the salad.

Decorate with spring onions and sesame seeds and serve.
