Thai Süsskartoffel und Gemüse Curry

Thai Sweet Potato and Vegetable Curry, typical Street Food from Thailand

I was in Thailand the last few days and once again really enjoyed the food there! One evening we visited the Night Market in Hua Hin and its many street food offerings. You can eat Thai, Indonesian, Chinese, Indian and Japanese. You go from stall to stall and order your dishes, which are then freshly cooked and delivered to your table.

There are all kinds of things to eat, usually the offers are printed on large posters with the respective price, and you just point to the picture. I show you here some pictures of it and bring you a recipe for a simple sweet potato and vegetable curry.

Ingredients

  • 5 String Beans from the Asia store

  • 3 Sweet Potatoes, diced

  • 1 big Eggplant, diced (or the small Thai Eggplants, halved)

  • 2 Carrots, in pieces

  • 8 Cherry Tomatoes

  • 1 Onion, chopped

  • 4 Garlic cloves, chopped

  • 1 Handful Sweet Peas and Okra

  • 6 small Corns

  • 350 ml Coconut Milk

  • 2-3 tbsp Thai Green Curry Paste

  • 2 tsp Brown Sugar

  • 2 cm Ginger, grated

  • Juice of 2 Limes

  • Red Chili to taste

  • some Oil

Instructions

Step 1

Heat the oil in a pot and fry the onion, garlic cloves and cherry tomatoes until translucent. When the tomatoes start to break down, add the vegetables.

Step 2

Sauté briefly and add the ginger, sugar curry paste and coconut milk. Add chili to taste. Simmer everything over medium heat for about 20 minutes, then add the lime juice.

Step 3

Serve hot with white rice.

Notes

This dish is gluten-free and vegan!!
