Aloo Dum ist eine der beliebtesten Beilagen in Nepal, Kartoffeln gehen immer! Aloo heisst Kartoffeln und Dum heisst langsam kochen/dämpfen. Dieses Rezept wird zu sehr vielen Curries serviert und man isst auch weissen Reis dazu, es ist also ein eigenes Gericht.

Es gibt viele Methoden Aloo Dum zu kochen, mit oder ohne Jogurt und mit oder ohne Cashewnuss. Da das Gericht in Nepal, im Himalaya Gebiet, Kaschmir, Punjab und vielen mehr Orten gekocht wird, gibt es auch so viele Arten. Auch dieses Rezept geht mit auf die Reise nach Nepal, mit der Kulinarischen Weltreise von Volkermampft!

Aloo Dum is one of the most popular side dishes in Nepal! Aloo means potatoes and Dum means slow cooking/steaming. This recipe is served with many curries and white rice is also eaten with it, so it is a dish in itself.

There are many ways to cook Aloo Dum, with or without yogurt and with or without cashew nuts. Since the dish is cooked in Nepal, Himalayan area, Kashmir, Punjab and many more places, there are also so many ways. This is another recipe from Nepal, which takes part in the culinary world travel from Volkermampft.

Aloo Dum

Für 4 Personen:
600 g Baby Kartoffeln
1 EL Kümmel Samen
1 EL Kurkuma
1 EL Ingwer, gerieben
1 EL Knoblauch, gerieben
1 EL Chili Pulver
½ EL Koriander Pulver
½ EL Kümmel Pulver
Salz
2 EL Oel

Die Kartoffeln dämpfen und auskühlen lassen. Dann schälen. Die Kurkuma mit dem Chili, Ingwer, Knoblauch, Kümmel Pulver und Koriander Pulver in einem kleinen Schüsselchen mischen, dann Wasser dazu geben. Das Oel in einer flachen Pfanne erhitzen und die Kümmel Samen darin braten bis sie knacken. Dann die Gewürzmischung dazu geben, ACHTUNG, es spritzt!

Die Sauce ca 4-5 Minuten kurz einkochen, dann die Kartoffeln dazu geben. Etwas Salz dazu geben, dann zugedeckt ca. 6-10 Minuten kochen lassen. Mit gehacktem Koriander bestreuen und servieren.

For 4 People:
600 g Baby Potatoes
1 tbsp Cumin Seeds
1 tbsp Turmeric
1 tbsp Ginger, grated
1 tbsp Garlic, grated
1 tbsp Chili Powder
½ tbsp Coriander Powder
½ tbsp Cumin Powder
Salt
2 tbsp Oil

Steam the potatoes and let them cool. Then peel them. Mix the turmeric with the chili, ginger, garlic, cumin powder and coriander powder in a small bowl, then add water. Heat the oil in a shallow pan and fry the cumin seeds until they crack. Then add the spice mixture, CAUTION, it splatters!

Cook the sauce for about 4-5 minutes, then add the potatoes. Add a little salt, then cover and cook for about 6-10 minutes. Sprinkle with chopped coriander and serve.
