Rotoli di Melanzane – Italian Eggplant Rolls

Ja genau, Ihr wisst es schon, ich bin ein bekennender Auberginoholic, ich koche Rotoli di Melanzane!
Und ich verrate Euch, dass diese einfachen Auberginenrollen eine Wucht sind! Ich habe sie als Vorspeise serviert, aber ich kann sie mir als Hauptspeise mit einem gemischten Salat sehr gut vorstellen. Auf jeden Fall sind sie im Nu weggewesen! Sie sind ganz einfach und schnell zu machen!

Ich habe hier zwei Moeglichkeiten, einmal einfache Fuellung, dann eine mit anderen Zutaten bereicherte Fuellung (in Klammern). Und einmal sind sie nur kurz ueberbacken mit etwas Kaese und das zweiteMal sind sie in Tomatensauce gekocht.

Yes exactly! You know already, I am an eggplantoholic! And I tell you, these eggplant rolls are the best ever! I served them as a starter, but I could also eat them as a main meal with a side salad. Anyway, they were eaten so quickly… they just disappeared! They are so easy and quick to make!

I made two different ways, one with a base for filling, the other with some more ingredients (in brackets). Then there are also two possibilities how to bake them, either just baked with a little cheese, or baked in a tomato sauce.

Fuer ca 14 Rollen:
2 Auberginen, in lange Scheiben geschnitten
300 g Kraeuterkaese
30 g weicher Gorgonzola Kaese
1/2 Bund Basilikum, gehackt
14 grosse Basilikumblaetter, ganz
(3 in Oel eingelegte getrocknete Tomaten)
Paprika
Pfeffer
Oliveneol
Etwas geriebener Parmesan

Den Kraeuterkaese mit dem gehackten Basilikum, (den kleingeschnittenen Tomaten,) dem Gorgonzola, Paprika und Pfeffer gut vermischen. Die Auberginenscheiben in wenig Oel weich braten. Die Auberginenscheinem auslegen und auf ein Ende ein Basilikumblatt legen. 1 Essloeffel der Kaesemischung darauf geben und sorgfaeltig aufrollen. Mit der “Naht” nach unten in eine gefettete Auflaufform geben. Die Rollen mit dem Parmesan bestreuen und im Ofen bei 180 C Grad 30 Minuten backen. Oder Tomatensauce in eine Gratinform geben, die Roellchen darauf geben und etwas Sauce darueber giessen. Mit Kaese bestreuen und im Ofen backen.

For approx. 14 Rolls:
2 Eggplants, cut into long slices
300 g Herb Cream Cheese
30 g soft Gorgonzola Cheese
1/2 Bunch Basil, chopped
14 big Basil Leaves
(3 dried Tomatoes in Oil)
Paprika
Pepper
Olive Oil
Some grated Parmesan

Mix the herb cream cheese with the chopped basil, (the chopped tomatoes,) Gorgonzola, paprika and pepper. Fry the eggplant slices in a little oil. Put the fried eggplant slices on a working surface an put a basil leave on top of one end. Add a tablespoon of the cheese mixture on top and roll carefully up. Put the rolls, with the opening down, into a greased gratin dish. 
Sprinkle the eggplant rolls with the grated Parmesan. Bake in the oven at 180 C for 30 minutes. Or add some Tomato Sauce to the greased form, put the rolls on top and top with some more sauce. Sprinkle with cheese and bake.
