Dass man suesse Cantuccini machen kann, weiss jeder. Ich habe zuhause immer ein grosses Glas voller Cantuccini, die ich dann zum Kaffee auftischen kann. Mein Liebster liebt sie sehr! Seine Frage, ob man die auch deftig machen kann, habe ich gleich mit Backen beantwortet. Yes, we can! So habe ich etwas zusammen gebastelt und es schmeckt ganz gut! Ich habe dazu Manchego Kaese verwendet, eigentlich wollte ich Pecorino benuetzen, aber habe ihn nicht erhalten. Man kann sie einfach als Fingerfood auftischen oder zu einer kalten Platte.

Everybody knows you can bake sweet Cantuccini. I always have a big jar of them at home, so I can serve them when I have guests over for coffee. Mu hubby really loves them! His question, if they can also be done savory I have answered with a baking session in the kitchen. Yes, we can! So I went to the kitchen and started putting something together. They turned out well. I used Manchego Cheese from Spain, but I wanted to use Pecorino from Italy. But I could not find it. Serve them as finger-food or together with a cold meat platter. 

Fuer ca. 25 Stueck:
210 g Mehl
50 g Pinien Nuesse
1 TL Backpulver
1/2 TL Salz
1/2 TL Pfeffer
1 TL Rosmarin
80 g geriebener Manchego oder Pecorino
60 ml Olivenoel
60 ml Milch
1 Ei

Das Mehl mit allen anderen Zutaten verkneten, dann zu einer langen Rolle formen und in Klarsichtfolie packen. Mindestens 1 Stunde im Kuehlschrank durchkuehlen lassen. Dann die Rolle auf ein Backblech geben und im Ofen bei 180 C Grad 18 Minuten backen. Die Rolle ganz auskuehlen lassen, dann in Scheiben schneiden und nochmals aufs Blech geben. Bei 180 C Grad nochmals 15 Minuten backen.
Die Cantuccini al Formaggio passen als Fingerfood zu einem Drink, oder als Kaesesnack zu Kaese- und Fleischplatten.

For approx. 25 Pieces:
210 g Flour
50 g Pine-nuts
1 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Pepper
1 tsp Rosemary
80 g grated Manchego or Pecorino
60 ml Olive Oil
60 ml Milk
1 Egg

Mix the flour with all other ingredients and form a roll with it. Pack it into cling-foil and store in the fridge for at least 1 hour. Then bake the roll in the oven at 180 C for 15 minutes. Let the roll cool down completely.
Cut the roll into 1 cm slices and put them back onto the baking tray. Bake again at 180 C for another 15 minutes. 
Serve the Cantuccini to a drink as appetizer or serve them to a platter with cheese and cold meat.
