It was my time to cook with 5 ingredients given to me by my daughter. And how sweet she was to give me 4 nice ingredients and one not matching at all.  I could not figure out, how to bring this one ingredient into the menu… it took me a while, but then… yes, I had it! The one ingredient was Honey! No, I did not want to make sweets, I am sweet enough! So, I tried to integrate it into a sauce. The one ingredient was Honey!

The 5 ingredients given to me were: Minced Meat, Fennel, Ravioli, Beans, Honey.

But, again, I did not buy Ravioli, but made them with those ingredients from scratch!

Ingredients

For the Ravioli:

  • 250 g Pasta Dough from  this Pasta recipe

  • 200 g minced Beef

  • 200 g Cream Cheese

  • 2 small Fennel

  • 2 Garlic cloves

  • Oregano

  • Basil

  • Salt and Pepper

  • Chili

  • Parsley

  • some Olive Oil

  • 1 Egg-white, 1 Egg-yolk

  • For the Sauce:

  • 20 g Butter

  • 1 Onion

  • Salt and Pepper

  • Parsley

  • Oregano

  • Paprika

  • 1 Spritzer White Wine

  • 150 ml Cream

  • 3 tbsp Honey

  • 1 Spritzer Aceto Balsamico

  • 1 can Red Beans

Instructions

Step 1

Chop the garlic and fry it in some olive oil. Chop the fennel and add it to the pan, fry it together for approx 7 minutes. Then add the minced meat, season well and fry until browned. Let it cool and then mix it with the cream cheese and herbs.

Step 2

Cut the pasta sheets into squares of approx 20/20 cm and brush all edges with egg-white. Put the meat filling on one side of the square and fold the other side over, and push down onto the other edge of the pasta sheet. Brush with egg-yolk and bake at 180 C for 20 minutes.

Step 3

Meanwhile chop the onion and cook slowly in melted butter. Add the herbs and a dash of white wine. Let cook for a few minutes and add the whipping cream and the washed red beans.

Season well and add the honey and a dash of Aceto Balsamico. 

Notes

Serve the ravioli with the sauce and some salad.
